Chicken pakoda/pakora



Ingredients


Boneless chicken breast (cut into pieces/chunks)
Rice flour -2 tspn
All purpose flour -1tspn
Gram flour -2 tspn
Red chilly powder
Turmeric powder
Coriander powder
Salt
Lime juice
Oil

Method:

  Marinate chicken with rice flour,gram flour,all purpose flour,salt,turmeric powder,chilli powder.coriander powder and little lime juice.Heat oil for deep frying;when the oil is piping hot reduce the flame to medium and fry the marinated chicken pieces.Serve it hot as a evening snack/appetizer.




Chilli Chicken



Ingredients

Boneless chicken breast (cut into pieces)
Onion and green chilly thinly sliced
Red chili sauce
Salt to taste
Oil

Method:

  Heat oil in a wok and add sliced onion and green chilies.Saute it for few seconds. Add chicken pieces and very very little salt( we are going to add red chili sauce to it which has salt and vinegar in it).Saute it for  few minutes till the chicken is cooked.Once the chicken pieces are cooked add the red chili sauce.Saute it for few seconds and serve hot with dhal rice.This is a very quick and delicious recipe.

Chicken balls



Ingredients

Minced chicken breast
Turmeric powder
Red chilli powder
Coriander powder
Finely chopped onion
Finely chopped green chilies
Coriander leaves finely chopped
Ginger garlic paste
Salt to taste
Oil

Method:

   To the minced chicken add turmeric powder,red chili powder,coriander powder,ginger garlic paste,chopped onion,green chilies,coriander leaves and salt.Mix well and shape it into small balls.Heat oil for deep frying.Once it is piping hot,reduce the flame to medium and fry these balls in the oil till they turn golden brown and crispy.Serve hot as a snack/appetizer or as a side dish with rice.







Mushroom Biriyani



Ingredients

Cooked Basmati Rice
Mushrooms sliced ( brown/white mushrooms;I used the brown one)
All purpose flour -1tspn
Rice flour -1tspn
Egg -1
Onion finely chopped -1big
Tomatoes chopped -2 to 3
Green chilies -2
Turmeric powder -1/2 tspn
Red chilli powder -1 tspn
Coriander powder -2 tspn
Ginger garlic paste -1 tspn
Garam masala -1/2 tspn
Mint leaves
Bay leaf,cinnamon sticks,cardamom,maze,cloves
Oil
salt

Method

   Marinate sliced mushrooms with red chilly powder,coriander powder,turmeric powder,garam masala,egg,all purpose flour,salt and rice flour.Fry this in hot oil and keep it aside. In the left over oil add bay leaf,cinnamon sticks,cardamom,maze and cloves.To this add chopped onion and green chilies. Saute until the onions turn translucent. Add ginger garlic paste and chopped tomatoes.When the tomatoes oozes water out add mint leaves and all dry spices(turmeric powder,coriander powder ,red chilly powder and garam masala).Add salt to taste.Add very little water and saute for few minutes till the tomatoes are cooked.To this add fried mushrooms as the first layer and cooked rice as second layer. Sprinkle little saffron and orange food color(optional).Close the dutch oven / deep bottom pan with its lid and leave it for a minute(in low flame).Turn off the stove;stir it slowly and serve hot with raita.

Kesari





Ingredients

Sooji/Rava/semolina -1cup
Ghee -2 to 3tblspn
Cashews 10-12
Raisins  10-12
Cardamom -3 or 4nos
Orange Food Color -a pinch
Granulated Sugar -1 1/2 cups
Water -3 cups

Method

   In a wok dry roast sooji (to get rid of the rawness of the sooji)and keep it aside.In the same pan heat 2 tblspn of ghee ;Fry the cashews and raisins and keep it aside.In the left over ghee add 3cups of water.Leave it to boil.When it starts boiling add the food color .At medium flame add sooji slowly ,keep stirring constantly and add sugar.When the sugar is fully dissolved add cashews,raisins,cardamom and 1tblspn of ghee.Keep stirring until the sooji starts leaving the sides of the pan.You can also add finely chopped apple/pineapple ;to do so you need to just fry them in ghee and add it when we  boil water for the preparation,the remaining steps are same.You can also try substituting milk for water.It is one of the simplest dessert with minimum ingredients and less time.
