Rava dhosai



Ingredients:

Rava - 1cup
Yogurt - 1/2 cup
Salt to taste
Onion finely chopped  -1 small
Green chillies - 2 Finely chopped
Oil

Method:

Soak rava/sooji with yogurt for 1 hour. To this add chopped onion and green chillies. Add salt and mix well.The batter should not be very thick so add water as required.Heat dosa tawa; pour 1 tablespoon of batter and spread it on the tawa starting from the middle and finishing off the sides.Drizzle 1/2 tspn of oil on the sides and flip the dosa the other side.Take it off when they turn golden brown on both the sides.

Pazham appam



Ingredients

All purpose flour - 1 cup 

Yellow Banana (ripened)  - 4, peeled
Sugar - 2-3tblspn ( or as required)
Coconut oil - To deep-fry

Method:

 Mix peeled bananas and sugar with the flour.Add little water if required.Heat oil in a deep frying pan.Use a scoop to take the batter. Put scoop by scoop batter in the oil.Fry till they turn golden brown.This is a simple & delicious snack for evening tea/coffee.








Peanut Chutney



Ingredients


Peanuts -1/2 cup roasted
Urad dhal -1 tblspn
Channa dhal(kadalai paruppu) -1 tblspn
Red Chillies -3-4nos
Onion -1 cut into cubes
Tamarind paste -1/4 tspn
Salt to taste

For Tempering

Oil -tspn
Mustard seeds -1tspn

Method:

Heat oil in a pan;roast peanuts,channa dhal,urud dhal and red chillies till the peanuts and dhal turns golden brown.Once they are done keep it aside and allow it to cool.Saute onions in the same pan and keep it aside.Now grind the roasted ingredients with tamarind and salt.Add water if required.Grind till it comes to the consistency of chutney.Heat oil in a pan ;add mustard seeds.When the mustard splutters ;add this to the chutney and mix well.Serve with idly/dhosa.


Tomato Rice



Ingredients:


Basmati rice-2 cups cooked
Tomatoes- 4 large finely chopped
Oil -1tblspn
Ghee -1tblspn
Bay leaf -1 no
Cinnamon stick -1/2 no
Onion- 1finely chopped
Green chillies- 2 slit lengthwise
Ginger Garlic paste- 1tspn
Coriander powder -1tspn
Red chilly powder -1/2 tspn
Cumin powder -1/4 tspn
Garam masala -1/4 tspn
Salt to taste

Method 1:


1. Heat the oil in a deep pan and add bay leaf and cinnamon stick .
2. Add onion and green chilies.Saute for few minutes.
3. Add chopped tomatoes and gingergarlic paste.
4.Saute till the tomatoes are cooked.
5. Add coriander powder,red chilly powder, cumin powder,garam masala and salt to taste.Cook on a low flame for 3-4 minutes, stirring frequently.
6.To this add the cooked rice. Mix them together and serve hot with raita.

Method 2: Using  uncooked basmati rice

Follow steps 1-5 ;
Add the prepared mixture to the soaked basmati rice. Cook the rice in the rice cooker.Serve Hot.




Green Gram(cherupayar) Curry



Ingredients:


Green gram(whole)(Cherupayar) - 1 1/2 cups
Onion - 1 no (thinly sliced)
Tomato - 1 no (chopped)
Garlic(chopped) - 4cloves
Cumin seeds(Jeerakam) - 1/2 tspn
Mustard seeds -1/2tspn
Green chillies - 3 nos(slit into two)
Chilly powder - 1/2 tsp
Coriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Coriander leaves(chopped) - 1 tbsp
Oil - 1 tbsp
Salt - As reqd
Water - 3 cups

Method:


      In a pressure cooker add green gram,tomatoes,green chilies,garlic,turmeric powder,coriander powder,chilly powder,salt and 3cups of water. Cook for 10minutes(/until 4 sizzling sound).For seasoning heat oil in a pan  and add mustard seeds. when the mustard splutters add cumin seeds.Add sliced onion and saute until it turns translucent.Add this to the cooked green gram.Sprinkle coriander leaves and serve hot.Goes well  with chapatti and naan.
